1. Pumpkin Chili

A hearty chili gettin’ in on the pumpkin spice craze

Prep to plate time: 1 hr 30 min
Servings: 6-8

Materials:

  • 2 lbs Ground Beef
  • 1 large White Onion, diced
  • 1 Green Bell Pepper, diced
  • 1/2 cup Pumpkin Puree
  • 2 cans (15 oz) Kidney Beans
  • 1 can (46 oz) Tomato Juice
  • 1 can (28 oz) Diced Tomatoes
  • 1 Tbsp Pumpkin Pie Spice
  • 1 Tbsp Chili Powder
  • 1/4 cup Sugar

Protocol:

  1. PREP: Dice the onion and green bell pepper
  2. PREP: Drain the diced tomatoes
  3. In a stock pot, cook ground beef over medium heat until brown, breaking it up as you go. Drain the excess liquid
  4. Stir in the onion and pepper and cook for 5 min
  5. Stir in the diced tomatoes, tomato juice and pumpkin puree until everything is evenly distributed
  6. Stir in the pumpkin spice, chili powder and sugar
  7. Simmer for one hour
  8. PLATE: Serve several scoops in a bowl
