06 - Oven Chicken FajitasOne-pot Mexican perfect for a weeknight

Prep to plate time: 1 hr
Servings: 4-6

Materials

For the seasoning:

  • 1 Tbsp Chili Powder
  • 1/2 Tbsp Paprika
  • 1/4 tsp garlic powder
  • 1 tsp Cumin
  • 1/4 tsp Cayenne Pepper
  • 1 tsp Sugar
  • 1/2 tsp Salt
  • 1/2 Tbsp Corn Starch

For the fajitas:

  • 1 lbs Chicken Breast
  • 1 large Onion
  • 1 medium Green Bell Pepper
  • 1 medium Red Bell Pepper
  • 1 Lime
  • 8 Tortillas (6-inch)
  • Vegetable Oil
  • 1/2 cup Sour Cream (optional)
  • 1/4 bunch Cilantro (optional)

Protocol

  1. PREP: Preheat oven to 400°F
  2. PREP: Mix all of the seasoning ingredients in a small bowl
  3. PREP: Cut onion and bell peppers into 1/2-inch wide strips and place in a 9×13-inch casserole dish
  4. PREP: Slice the chicken into thin strips and add to the casserole dish with the vegetables
  5. PREP: Stem and chop cilantro
  6. Sprinkle seasoning over chicken and vegetables along with 2 Tbsp of vegetable oil. Mix together with hands until everything is well coated
  7. Bake for 35 min until chicken is cooked thoroughly, stirring once half way through
  8. Squeeze the juice from half of the lime as soon as the dish is taken out of the oven
  9. PLATE: Scoop chicken and vegetable mixture into the center of a tortilla. Top with cilantro, sour cream and lime
