12. Taco Pizza

12 Taco PizzaIt’s not the Pizza Hut. It’s not the Taco Bell. It’s the combination Pizza Hut and Taco Bell

Prep to Plate time: 50 min
Servings: 2-4

Materials

  • 1 Thin Pizza Crust Dough
  • 1 cup Pico de Gallo
  • 1 cab Refried Beans (15 oz)
  • 1 cup Salsa
  • 1/2 cup Frozen Corn
  • 1-1/2 cups shredded Cheddar
  • 1 clove Garlic
  • 1/4 cup Sour Cream
  • 1/2 Tbsp Chili Powder
  • 1/2 cup Cilantro
  • Vegetable oil
  • Corn meal
  • 1/2 cup cooked Chicken (optional)

Protocol

  1. PREP: Make the pizza crust dough
  2. PREP: Preheat oven to 450°F
  3. PREP: Mince the garlic. Chop the cilantro. If topping with chicken, cut into bite sized pieces
  4. Pour 2 Tbsp of vegetable oil in a small pot and heat on high. Add the garlic and cook until fragrant. About 1 min
  5. Add the refried beans, salsa and chili powder to the pot and stir until evenly mixed and smooth
  6. Lightly oil a pan and dust with corn meal. Spread the dough to fit the pan
  7. If the pan is not perforated, par-bake the dough for 5 min, otherwise…
  8. Spread the bean mixture evenly across the top of the dough. Top with the corn and cheddar cheese then bake for 15 min, checking every 5 min to get desired crunchiness
  9. Pull out of the oven then top with the pico de gallo and cilantro
  10. Drizzle the sour cream by placing in a plastic bag, cutting a small hole in the corner, then squeezing across the top of the pizza
  11. PLATE: Cut it up!
