16. Baked Ziti

No-nonsense Italian casserole

Prep to plate time: 1 hr
Serves: 10-12


  • 1 lbs Italian Sausage
  • 1 lbs Ground Beef
  • 1 large Onion
  • 1 can Whole Tomatoes (28 oz)
  • 2 cans Tomato Sauce (14.5 oz)
  • 1 lbs Ziti or Mostaciolli
  • 15 oz Whole Milk Ricotta Cheese
  • 1/2 cup grated Parmesan Cheese
  • 1-1/2 lbs grated Mozzarella Cheese
  • 1 Egg
  • 2 tsp Italian Seasoning
  • 1/2 tsp Red Pepper Flakes
  • 3 cloves Garlic
  • Olive Oil


  1. PREP: Dice the onion. Mince the garlic
  2. PREP: Cook the pasta until al dente. Drain and rinse to stop the cooking
  3. In a large pot, heat 2 Tbsp of olive oil over medium heat. Cook onions and garlic until just starting to soften
  4. Add sausage and ground beef and cook until browned. Drain the fat, leaving about a Tbsp in the pot
  5. Add the whole tomatoes, tomato juice, Italian seasoning, and red pepper flakes
  6. Let simmer for 25 simmer min, stirring sparingly
  7. Remove 4 cups of the sauce to a bowl
  8. Set oven to 375°F
  9. In a separate bowl, add the ricotta cheese, 2 cups of mozzarella cheese, Parmesan cheese and egg. Mix lightly
  10. In a large bowl, pour the pasta along with the cheese and toss to combine, leaving large chunks
  11. Add the meat sauce and toss to combine
  12. In a large casserole dish, add half of the pasta then spoon half of the remaining sauce on top. Add the half of the remaining mozzarella cheese. Repeat, making another layer
  13. Bake until bubbling, about 20 min
  14. PLATE: Remove from oven and let sit for 5 min before serving
