19. Vegetable Quinoa Pilaf

19 Vegetable Quinoa PilafSuper healthy side dish that can sub as a meal in a pinch

Plate to prep time: 40 min
Servings: 4-6


  • 1 cup Quinoa
  • 1 medium Carrot
  • 1 stalk Celery
  • 2 cups Baby Spinach
  • 1 can Black Beans (15 oz)
  • 1/3 cup Raisins
  • 1 Tbsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Coriander
  • Olive Oil


  1. PREP: Chop the carrots and celery
  2. PREP: Rinse and drain the black beans
  3. Place the quinoa in a medium sized pot and rinse with water. Drain without losing too much quinoa
  4. Fill the pot until there is about 1″ of water above the quinoa and bring to a boil
  5. Once the water is boiling stir in the remaining ingredients and 2 Tbsp of olive oil
  6. Cover the pot, reduce the heat to medium-low and let simmer for 20 min
  7. Remove the lid, stir in the spinach and continue cooking until no water remains
  8. PLATE: Fluff the pilaf with a fork before serving
