20. Basil Pesto

Make your own full flavored basil pesto at home

Prep to plate time: 15 min
Makes: 1-1/2 cups


  • 2/3 cup lightly toasted Walnuts or Pine Nuts
  • 6 cups loosely packed fresh Basil
  • 3 cloves Garlic
  • 1/2 cup Olive Oil (EVOO)
  • Salt
  • Pepper
  • Optional: 1/2 cup grated Parmesan Cheese (if using immediately)


  1. PREP: Chop the garlic. Lightly toast the nuts if not purchased that way
  2. In a large bowl, prepare an ice bath.
  3. Bring a quart of water to boil and add 1 Tbsp of salt
  4. Submerge the basil then immediately remove and place in the ice bath. Drain and dry either by patting with paper towels or with a salad spinner
  5. In a food processor, add the toasted nuts, basil and garlic
  6. Turn on the machine and while running, slowly pour the olive oil until mixture is smooth and seasoning to taste with salt and pepper
  7. PLATE: If using immediately, stir in grated cheese. If freezing, divide into ice-cube tray sized portions and add the cheese after letting thaw at room temperature
