25. Cheesy Vegetable Tian

25 - Vegetable TianA colorful vegetable side dish with a cheesy touch

Prep to plate time: 1 hr
Servings: 4-6


  • 1 large Yellow Onion
  • 1 medium Zucchini*
  • 1 medium Yellow Squash*
  • 1 medium Russet Potato*
  • 2 medium Roma Tomatoes*
  • 2 cloves Garlic
  • 1/3 cup shredded Mozzarella Cheese
  • 2 Tbsp grated Parmesan Cheese
  • 1 Tbsp Italian Seasoning
  • Olive Oil
  • Nonstick Cooking Spray

*For presentation, try to get diameter of vegetables to be about the same


  1. PREP: Dice the onion. Mince the garlic
  2. PREP: Cut the zucchini, squash and potatoes into thin slices (about 1/8″), preferably using a mandolin. Cut the tomatoes into thin slices
  3. In a medium pan, heat 1 Tbsp of olive oil over high heat. Add onions and garlic and saute until soft and fragrant. About 5 min
  4. Preheat oven to 400°F
  5. Spray the bottom of a glass or ceramic baking dish and spread the onions and garlic across the bottom evenly
  6. Evenly overlap the sliced vegetables on top of the onions, alternating vegetables. Start on the outside and continue in a spiral until no space remains
  7. Evenly drizzle 1 Tbsp of olive oil and sprinkle the Italian seasoning across the top of the vegetables
  8. Cover the dish with aluminum foil and bake for 30 min
  9. Remove the aluminum foil and evenly sprinkle the cheeses across the top. Return to the oven and bake for an additional 10 min
