30. Tofu and Edamame Soba Noodles

30 - Soba with TofuColorful and healthy Japanese noodles with a spicy little kick

Prep to plate time: 40 min
Serves: 4-6

Materials

  • 12 oz Soba Noodles
  • 12 oz hard Tofu
  • 1 Red Bell Pepper
  • 1/4 head Red Cabbage
  • 3 medium Carrots
  • 2 cups shelled Edamame
  • 3 Green Onions
  • 3/4 cup Cilantro
  • For the sauce:
    • 1/2 cup Light Soy Sauce
    • 2 Tbsp Vegetable Oil
    • 2 Tbsp Rice Wine Vinegar
    • 2 tsp Sesame Oil
    • 2 tsp Crushed Red Pepper

Protocol

  1. PREP: Thinly slice the pepper and cabbage. Peel the carrots using a vegetable peeler or mandolin into short, thin slices. Chop the cilantro and the green part of green onions
  2. PREP: Cut the tofu into small cubes
  3. Bring enough water to cover the noodles to a boil and cook noodles until just soft, but not too soft. About 5 min. Drain and then rinse with cold water
  4. In a small bowl, whisk together the ingredients for the sauce
  5. In a large serving bowl, add the noodles, vegetables, tofu and sauce. Stir to mix evenly
