36. One-pot Beef Stroganoff

36 - Beef StroganoffLighter take on the beef and mushroom Russian pasta dish

Prep to plate time: 45 min
Serves: 3-4


  • 3/4 lbs Ground Beef
  • 8 oz Button Mushrooms
  • 8 oz Egg Noodles or Pasta (short and wide)
  • 2 cups Beef Broth
  • 1/3 cup light Sour Cream
  • 2 cloves Garlic
  • 1/4 cup fresh Parsley
  • Olive Oil
  • All-purpose Flour


  1. PREP: Slice the mushrooms. Mince the garlic. Chop the parsley
  2. In a large pot, meat 2 Tbsp of olive oil over medium heat. Add the garlic and cook until fragrant, about 3 min
  3. Add the ground beef and saute while breaking apart until no more pink is showing
  4. Add the mushrooms and continue cooking until they are soft, about 5 min
  5. Add 2 Tbps of flour and stir to coat evenly
  6. Add the beef broth and stir to dissolve any flour that has stuck to the pot
  7. Turn the heat to high, add the noodles and cover the pot. Once it reaches a boil, reduce heat to low and let simmer until noodles are tender and liquid has been absorbed, about 10 min. Stir once in a while to prevent noodles from sticking to the bottom of the pot
  8. PLATE: Stir in the sour cream and parsley
