Tofu on pizza sounds crazy, but it makes for one unique pizza
Plate to prep time: 1 hr
Serves: 2-4
Materials
- 1 Thin Pizza Crust Dough
- 1/2 block extra firm Tofu
- 1/1 cup Broccoli
- 2 Tbsp Mango
- 2 Tbsp Peanuts
- 2 Green Onions
- 1 Tbsp Cilantro
- 1 cup shredded Mozzarella cheese
- Vegetable Oil Spray
- Cornmeal
- 1 recipe Peanut Sauce:
- 3 Tbsp smooth Peanut Butter
- 1 Tbsp Rice Vinegar
- 1 Tbsp Soy Sauce
- 1 Tbsp water
- 1 clove Garlic
- 1 tsp Sesame Oil
- 1 tsp Chili Garlic Sauce or Sriracha
- 1 tsp Honey or Agave Nectar
- 1/4 tsp Ground Ginger
Protocol
- PREP: Make the pizza crust dough
- PREP: Chop the broccoli, mango, cilantro and green onions. Crush the peanuts. Crumble the tofu
- PREP: Use a food processor to blend together all the ingredients for the peanut sauce until smooth
- PREP: Preheat oven to 350°F
- Mix 2 Tbsp of the peanut sauce with the tofu
- Heat a pan on medium-high and cook tofu until slightly colored, about 5 min
- Lightly spray a pan with vegetable oil and dust with cornmeal. Spread the dough to fit the pan
- Spread the remaining sauce on top of the dough. Layer tofu, cheese, broccoli and green onions
- Place in oven and bake for 15 min, checking every 5 min for desired crunchiness
- SERVE: Top with mango, peanuts and cilantro. Cut it up!

Mm I’ve had tofu on pizza before but the other toppings make this sound pretty unique. Definitely on my ‘to-try’ list!
