43. Balsamic Baked Tilapia

43 - Balsamic TilapiaLight and flaky fish dish topped with balsamic stir fried peppers and onions

Prep to plate time: 45 min
Serves: 4


  • 4 4 oz filets Tilapia
  • 1 cup Blue Cheese
  • 1 Yellow Onion
  • 1 Red Bell Pepper
  • 4 cups Mixed Greens
  • 1 Tbsp Balsamic Vinegar
  • Olive Oil
  • Pepper


  1. PREP: Cut pepper and onion into thin slices
  2. PREP: Rub each tilapia filet with 1 tsp olive oil on each side. Place in a small baking dish
  3. PREP: Preheat oven to 350°F
  4. In a large skillet, heat 1 Tbsp olive oil over medium-high heat. Cook onion and pepper until vegetables are tender and onions are golden, about 10 min. Stir balsamic vinegar into the vegetables and season with salt and pepper
  5. Top the tilapia filets with the balsamic vegetable mixture. Sprinkle blue cheese evenly across the top
  6. Bake until fish flakes evenly, about 15 min
  7. PLATE: Serve atop salad greens
