Light and flaky fish dish topped with balsamic stir fried peppers and onions

Materials
- 4 4 oz filets Tilapia
- 1 cup Blue Cheese
- 1 Yellow Onion
- 1 Red Bell Pepper
- 4 cups Mixed Greens
- 1 Tbsp Balsamic Vinegar
- Olive Oil
- Pepper
Protocol
- PREP: Cut pepper and onion into thin slices
- PREP: Rub each tilapia filet with 1 tsp olive oil on each side. Place in a small baking dish
- PREP: Preheat oven to 350°F
- In a large skillet, heat 1 Tbsp olive oil over medium-high heat. Cook onion and pepper until vegetables are tender and onions are golden, about 10 min. Stir balsamic vinegar into the vegetables and season with salt and pepper
- Top the tilapia filets with the balsamic vegetable mixture. Sprinkle blue cheese evenly across the top
- Bake until fish flakes evenly, about 15 min
- PLATE: Serve atop salad greens
