45. Slow Cooked Orange Chicken and Broccoli

45 - Orange Chicken BroccoliNot-too-sweet, not-too-sticky orange chicken with broccoli served great over rice

Prep to plate time: 5 hr 30 min
Serves: 4

Materials

  • 1-1/2 lbs boneless skinless Chicken Breasts
  • 1 head Broccoli
  • 2 Green onions
  • 2 Tbsp Cornstarch
  • 3 Tbsp Olive Oil
  • 3/4 cup Orange Marmalade
  • 2 Tbsp Soy Sauce
  • 1 tsp Rice Vinegar
  • 1/2 tsp Sesame Oil
  • 1/2 tsp Sambal (chili sauce)
  • 1/2 tsp Crushed Red Pepper
  • Pepper

Protocol

  1. PREP: Cut the broccoli into florets. Chop the green onions
  2. PREP: Cut the chicken into bite-sized pieces
  3. Place the chicken in lidded container with the cornstarch and shake to coat. Add 1 Tbsp of water as needed to form a light batter
  4. Coat a skillet with the olive oil and turn heat to medium-high
  5. Add the chicken to the skillet and cook without stirring until lightly browned, about 3 min
  6. Flip the chicken over and cook for an additional 3 min. No pink should be showing
  7. Place chicken in the slow cooker along with the broccoli
  8. Mix the remaining ingredients (minus the green onions) with a pinch of pepper in a small bowl then pour over the top and mix well
  9. Cook on low for 5 hrs or high for 2 hrs 30 min
  10. PLATE: Serve on top of rice and sprinkle with green onions
