47. Easy Quiche

47 - QuicheAn easy way to make a silky egg custard you can fill with whatever’s left in your fridge

Plate to prep time: 1 hr
Serves: 3-4


  • For the crust:
    • 1 cup tightly packed All-purpose Flour
    • 1/4 cup Olive Oil
    • 1/4 cup water
    • 1 tsp Salt
  • For the custard:
    • 3 large Eggs
    • 1 cup Milk
    • 1/4 cup Cream
    • 1 cup chopped and prepared fillings (mushrooms, tomatoes, spinach, bacon, ham)
    • 1 cup shredded cheese (Cheddar, Swiss, Gruyere)


  1. PREP: Cook your raw filling ingredients until just done
  2. PREP: Preheat the oven to 350°F
  3. Mix all the ingredients for the crust in a large bowl until fully incorporated
  4. In a round baking dish, spread the dough as thin as you can along the bottom and form an edge
  5. Bake the crust alone for 8 min
  6. Whisk the together the eggs, milk and cream in a large bowl
  7. Stir in the fillings until evenly mixed
  8. Remove the crust from the oven and line the bottom with half the cheese. Pour in the custard and then top with the remaining cheese
  9. Bake for 25 min or until edges of the custard are firm, but center still slightly jiggles
  10. PLATE: Let cool before cutting up and serving
