48 - Cold Soba SaladA refreshing Japanese noodle salad

Plate to prep time: 25 min
Serves: 4


  • 8 oz Soba Noodles (or Spaghetti in a pinch)
  • 1 Cucumber
  • 1/2 pint Cherry Tomatoes
  • 2 Green Onions
  • 1/3 cup unsalted Peanuts
  • 1/3 cup Rice Vinegar
  • 2 Tbsp Sugar
  • 1 tsp toasted Sesame Oil
  • 1 tsp Red Pepper Flakes


  1. PREP: Peel, deseed and cut the cucumber into bite sized chunks. Cut the cherry tomatoes in half. Chop the peanuts and green onions
  2. Cook the noodles until just cooked and rinse with cold water
  3. In a small bowl, whisk together the rice vinegar, sesame oil, sugar and crushed red pepper
  4. In a large bowl add the cucumber, tomatoes, green onions and peanuts. Pour the dressing on top and stir to combine
  5. Add the noodles handfuls at a time and stir to incorporate the vegetables and dressing
  6. PLATE: Chill before serving
