49. Black-Eyed Pea and Sausage Stew

49 - Sausage and Black BeanAn almost chili-like stew with a little bit of kick to it

Plate to prep time: 30 min
Serves: 4


  • 1 lbs Hot Italian Sausage
  • 2 large Yellow Onion
  • 2 cans (15 oz) Black-Eyed Peas
  • 1 can (14.5 oz) Stewed Tomatoes
  • 1 cup frozen Corn or mixed vegetables
  • 1 can (8 oz) Tomato Sauce
  • 1 cup Beef Broth
  • 1 tsp Hot Sauce
  • Red Pepper Flakes


  1. PREP: Chop onion. Drain black-eyed peas. Remove sausage from casings
  2. Heat a large stockpot on medium-high and add sausage. Cook while breaking up until no longer pink
  3. Add the remaining ingredients along with a pinch of red pepper flakes. Stir to combine
  4. Bring to a boil then reduce to a simmer. Continue to cook for 15 min
