51. Italian Pasta Salad

A light and herby pasta salad

Prep to plate time: 30 min
Serves: 4-6


  • 2 cups Elbow Macaroni or other short pasta
  • 3/4 cups Cherry Tomatoes
  • 1/4 cup Basil
  • 1/4 cup crumbled Feta Cheese
  • 1/3 cup seedless Olives
  • 1/3 cup Olive Oil
  • Pepper


  1. PREP: Halve the tomatoes and olives. Julienne the basil
  2. Cook pasta according to package. Drain and cool completely
  3. In a large bowl add the tomatoes, basil, feta and olives to the pasta. Stir to combine
  4. Pour olive oil over top and mix to coat evenly. Season with pepper to taste
  5. PLATE: Can serve immediately or chill before serving
