53 - Chickpea salad sandwichGreat way to eat those garbanzo beans on the go

Prep to plate time: 10 min
Serves: 4-5


  • 1 can (15 oz) Chickpeas
  • 2 stalks Celery
  • 2 Green Onions
  • 1/4 cup Mayonnaise
  • 1 Tbsp Dijon Mustard
  • 1 Tbsp Red Wine Vinegar
  • 1 Tbsp dried Parsley
  • Cayenne Pepper
  • Pepper


  1. PREP: drain and rinse chickpeas
  2. PREP: chop celery and green onions
  3. Add the chickpeas to a food processor and pulse to roughly chop
  4. Add the remaining ingredients including a pinch of cayenne pepper and pepper to taste
  5. PLATE: serve as a spread for a sandwich
