54 - Coronation Chicken SaladCurried version of the chicken salad sandwich

Prep to plate time: 45 min
Serves: 4


  • 1-1/2 lbs boneless skinless Chicken Breast
  • 4 stalks Celery
  • 1/2 cup Mayonnaise
  • 2 Tbsp Milk
  • 2 Tbsp Cilantro
  • 1 Tbsp Lemon Juice
  • 1-1/2 tsp Curry Powder
  • Pepper
  • Oliver Oil


  1. PREP: chop the celery and cilantro
  2. PREP: cut the chicken into small pieces
  3. Heat 1 Tbsp of olive oil in a skillet over medium heat. Add the chicken and season with pepper. Cook until the chicken is just done
  4. In a large bowl combine the mayonnaise, milk, cilantro, lemon juice and curry powder
  5. Drain the chicken and add to the bowl along with the celery
  6. PLATE: serve as a sandwich or wrap
