56. Pan-fried Tofu and Soba Salad

56 - Pan Fried Tofu and Soba SaladA simple, healthy sesame-soy noodle dish

Plate to prep time: 45 min
Serves: 4


  • 1 block firm Tofu
  • 10 oz dried Soba Noodles
  • 2 Green Onions
  • 1/3 cup Sesame Oil
  • 1/2 cup Soy Sauce
  • 2 Tbsp Sesame Seeds
  • Vegetable Oil
  • 1 cup cooked vegetables (optional; prefer broccoli, carrots, shelled edamame)


  1. PREP: chop the green onions
  2. PREP: cut the tofu into cubes
  3. Boil the noodles until just al dente
  4. In a frying pan, heat 1 Tbsp of vegetable oil over medium-high then fry tofu until golden brown. Set aside
  5. Mix the soy sauce and sesame oil in a small bowl
  6. Mix the cooked soba and sesame-soy dressing together
  7. PLATE: divide the noodles evenly, then distribute the tofu (and vegetables) amongst each portion. Sprinkle with sesame seeds and green onions
