57. Turkey Taco Salad

57 - Turkey Taco SaladFlavorful burrito bowl, skinny style

Prep to plate time: 30 min
Serves: 2-4

Materials

  • 1 lbs ground Turkey
  • 1 Red Bell Pepper
  • 1 small Jalapeño
  • 1 can (15 oz) Beans (black, kidney or pinto)
  • 1 clove Garlic
  • 1 Tbsp Chili Powder
  • 2 tsp Ground Cumin
  • 1/4 tsp Paprika (regular or smoked)
  • Pepper
  • Vegetable Oil
  • Shredded Lettuce or Mixed Greens
  • Additional toppings
    • Crushed Tortilla Chips
    • Shredded Cheese (Monterey Jack, Cotija)
    • Sour Cream
    • Pico de Gallo or Salsa
    • Guacamole or Avocado
    • Cilantro
    • Limes

Protocol

  1. PREP: seed and dice the bell pepper. Seed and mince the jalapeño. Mince the garlic. Rinse and drain the beans
  2. In a large skillet, warm 1 Tbsp of oil over medium-high heat. Add the peppers and cook until beginning to soften, about 3 min
  3. Add the turkey along with the garlic, chili powder, cumin, paprika and pepper to taste. Saute while breaking up the turkey and mixing in the spices until turkey is browned, about 7 min
  4. Add the beans and mix in until warmed through
  5. PLATE: serve the turkey mixture on top of a bed of greens and top with desired toppings
